Chocolate, Apple, & Zucchini Muffins


Makes 24 mini muffins or 12 medium size muffins


3 eggs
1 cup grated apple
½ cup sugar
1 cup vegetable oil
1/3 cup coco powder
2 cups grated zucchini
3 ½ cups S/R flour
1 Tsp mixed spice


1. Preheat oven to 180.

2. Beat eggs in a bowl then add sugar, apple, oil, coco powder and zucchini

3. Stir in sifted flour and spices

4. Pour batter into lined muffin trays

5. Bake for 15-20 mins till a skewer comes out clean.

Let cool down

Pink Icing

250gms softened cream cheese
1 Tsp Agave nectar (found in the health food section of the supermarket)
2 TBS of beetroot juice or 2 TBS of strawberry puree or frozen raspberry pureed

Mix all the ingredients in a bowl and spread over your cooled muffins.
